Ingredients
- 400g lean lamb loin, cut into 2-3 cm cubes
- 1 large eggplant, cut into 2-3 cm cubes
- 1 red bell pepper, cut into 2-3 cm squares
- 1 red onion, cut into wedges
- 250g cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- 200g plain Greek yogurt
- 1 clove garlic, minced
- 20g fresh mint, finely chopped
- 1 tablespoon lemon juice
Instructions
- If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
- In a large bowl, combine the lamb cubes, eggplant, bell pepper, and red onion. Drizzle with olive oil and sprinkle with oregano, paprika, salt, and pepper. Toss well to coat evenly.
- Thread the marinated lamb and vegetables onto the skewers, alternating between them. Add a cherry tomato at each end.
- Preheat a grill or a large griddle pan over medium-high heat. Cook the skewers for 10–15 minutes, turning occasionally, until the lamb is cooked through and the vegetables are tender and slightly charred.
- While the skewers cook, prepare the sauce. In a small bowl, mix the Greek yogurt, minced garlic, chopped mint, and lemon juice. Season with a pinch of salt.
- Serve the hot skewers immediately with the cool mint-yogurt sauce on the side.
Tips & Substitutions
- Make it vegetarian: Swap the lamb for extra eggplant, zucchini, and halloumi cheese for a hearty veggie version.
- Enhance the flavor: Marinate the lamb and vegetables for at least 1 hour before grilling to deepen the Mediterranean flavors.
- Serve creatively: Pair the skewers with couscous, quinoa, or flatbreads to make it a complete meal.
