Ingredients

300g butternut squash, peeled and cubed
50g red lentils, rinsed
30g unsulphured dried apricots, chopped
400ml water
5ml extra virgin olive oil

Instructions

In a small saucepan, combine the cubed butternut squash, rinsed red lentils, chopped apricots, and water.
Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and let it simmer for 15–20 minutes, or until the squash is very tender and the lentils are fully cooked.
Remove the saucepan from the heat and allow it to cool for a few minutes.
Carefully transfer the mixture to a blender. Add the extra virgin olive oil.
Blend until completely smooth. Add a little more water if necessary to achieve your desired consistency. Serve warm or portion into containers for freezing.
